Keith  Phillips


A Memorial Service will be held Saturday, July 20, 2019, at 11 a.m., at Collinsville United Methodist Church for Keith Phillips of Collinsville, Miss. Pastor Ron Kitchens will be officiating.
Keith was a graduate of West Lauderdale High School, attended University Southern Mississippi in the Business Administration Program, but later discovered his passion for cooking and earned a degree in Culinary Arts at the Gulf Coast Campus of USM. While attending the Culinary Arts School, the class participated in a national contest sponsored by the Idaho Potato Industry. Keith placed first place nationally with his winning recipe entry. Also, he and his friend, Bob Smith, owned and operated two Subway Franchises on the Gulf Coast for many years.
He is survived by his mother Dorothy Phillips; brothers Lynn Phillips (Jeri) and Terry Phillips of Collinsville; niece Jessy Phillips Lyons (Trey) of Chicago, Ill.; nephew Drew Phillips of Seattle, Wash., and numerous aunts, uncles and cousins.
He is predeceased by his father, Fred Phillips; his grandparents Roy and Verdie Phillips and Hubert and Ruby Brooks.
Keith had a special love for plants and wildlife and his property was designated a natural habitat for wildlife by The National Wildlife Federation. He believed there was an urgent need for environmental conservation and was especially impressed with the Mississippi and National conservation action and support by The Nature Conservancy. He was also a prolific gardener and was known for his ability to make uncommon plants for this southern area grow and thrive. His last achievement was the cross pollination of a new strain of basil that he named for his mother, Dorothy.
In lieu of flowers, the family requests that donations be made in his name to The National Wildlife Federation, The Nature Conservancy, The National Audubon Society or the charity of your choice.
